Hopefully your gardens are doing better than mine and you can make this tonight!
Stuffed Bell Peppers
1 lb ground beef
1/2 cup uncooked long grain white rice
1 cup water
6 green bell peppers
2 (8oz) cans tomato sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt and pepper to taste
1 teaspoon Italian seasoning
Directions:
1. Preheat oven to 350 degrees
2. Place the rice and water in a saucepan and bring to a boil. Reduce heat, cover and cook for 20 minutes. ( Sometimes I fix a meal the night before that requires rice and set aside about a cup of rice and this meal comes together much faster!)
3. In a skillet cook beef until evenly browned.
4. Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers on a cookie sheet lined with foil, with hollowed sides up. You may have to slice the bottoms a little so they will stand up straight.
5. In a bowl, mix the browned beef, cooked rice, I can of tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt and pepper.
6. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a small bowl, and pour over stuffed peppers.
7. Bake 1 hour in the preheated oven, basting with your extra sauce every 15 minutes, until the peppers are tender.
And enjoy!
If your wondering why I have pictures.. I took these about 5 months ago with the intention of putting this recipe on my blog, but never did. Maybe thats why I don't have peppers? Hummmm?
